The Cleanse, Day2
Day 2 and still feeling the same. No new revelations today, although I did discover that vegan cheese hardly passes for food. I tried one of the recipes in Kathy Freston’s new book on the Cleanse - quesadillas. I had to go buy vegan cheddar cheese, which is essentially oil and soy, to make them. I shredded the cheese and added the roasted tomatoes and carmelized onions I’d prepared to my brown rice tortillas. The cheese melted, and it looked sort of like the fake nacho cheese sauce you see when you buy concession stand nachos. If only it had tasted that good. Yick!
When my husband came home later, I fixed him a quesadilla with whole wheat tortillas and the Veggie Shreds cheese we normally eat (but which contains casein, a no-no on the cleanse), and that tasted much better. So, I think this is going to have to be one of the compromises for me on the Cleanse – to eat the imperfect cheese when I have cheese. I refuse to be grossed out by my food!
